Death Knights have a need to feed on the suffering of others. The Lich King gave all his minions a depraved addiction and the DK’s is causing pain to other creatures. Otherwise you can but don’t need to eat traditionally. Like eating in the traditional way, you can but it’s not necessary.

They’re fairly simple. Just to add to the consensus, IMO, DK’s are very accessible. If Bear Druid is the king of simple tanking, Blood DK adds a couple more abilities in exchange for being easier to heal (and then the Monk does the same, adds more abilities to be even easier to heal).
