Do you put anything on a head gasket?
Sealant for head gaskets usually have the viscosity of an oil. Gasket Goo, whilst not familiar to me, sounds too thick for a head gasket. Almost all head gaskets I have ever seen DO NOT USE ANY TYPE OF EXTRA SEALANT. I would highly suggest you DO NOT add any separate ANYTHING on the head gasket.
Should you oil a gasket?
I myself will use grease/oil to coat gaskets before putting them in place, EXCEPT the head gaskets which I put on dry. The benifit of oil/grease besides making it easier to “stick” the gasket in place is that the grease/oil will seal up micro pores in the metal and gasket and aid sealing in some cases.

Can I use silicone on a head gasket?
SILICONE rubber or room temperature vulcanizing RTV can be used in combination with some gasket applications. Also, it is not very strong so it should not be used in high pressure applications like a head gasket or hydraulics or brake lines.
Should I put silicone on a gasket?
NEVER use silicone on both sides of the gasket, the gasket will slip and slide all over the place instead of staying put and clamping down. Another substitute for the high tack is Copper Coat (in the copper spray can). This works really well for head gaskets since it’s a light film.
