FAQ

Is it safe to eat food from damaged cans?

Is it safe to eat food from damaged cans?

As long as the can is in good shape, the contents should be safe to eat. NEVER USE food from cans that are leaking, bulging, or badly dented; cracked jars or jars with loose or bulging lids; canned food with a foul odor; or any container that spurts liquid when opening. Such cans could contain Clostridium botulinum.

Is buying dented cans okay?

A sharp dent on either the top or side seam can damage the seam and allow bacteria to enter the can. Discard any can with a deep dent on any seam. Basically, minor dents should be okay. But if you can fit your finger into the dent, or if the dent is on the seam of the can, there’s a risk of foodborne illness.

Do all dented cans have botulism?

The risk is very small because usually dents do not produce holes. Dented cans do not necessarily have to be thrown out but their contents should be boiled to kill any microbes and destroy any toxin that could have been produced by the Clostridium botulinum bacteria.

How do I know if my dented cans are safe?

Side seams are on the side of the can and are usually covered by the label. End seams are on the top and bottom of the can. If there is a dent over any of these seams, the can has at least a Major defect, meaning it is unsafe. If a dent has sharp or pointed edges, it is also considered to have an unsafe, Major defect.

When should you not use dented cans?

If a can containing food has a small dent, but is otherwise in good shape, the food should be safe to eat. Discard deeply dented cans. A deep dent is one that you can lay your finger into. Deep dents often have sharp points.

Does cooking destroy botulism?

Despite its extreme potency, botulinum toxin is easily destroyed. Heating to an internal temperature of 85°C for at least 5 minutes will decontaminate affected food or drink.

Can you boil out botulism?

Though spores of C. botulinum are heat-resistant, the toxin produced by bacteria growing out of the spores under anaerobic conditions is destroyed by boiling (for example, at internal temperature greater than 85 °C for 5 minutes or longer).

Does microwaves kill botulism?

The germs that cause food poisoning are killed in the microwave by the heat that is produced, not by radiation. “While the botulinum spores can survive in boiling water, the botulinum toxin is heat-labile. Microwaves can be very effective in the reheating process if used correctly.

Does botulism die when exposed to air?

PHYSICAL INACTIVATION: Toxin is destroyed after heating for 5 minutes at greater than 85°C(1,8,9). Toxins are detoxified in air within 12 hours and following exposure to sunlight within 1 to 3 hours(9).

How long does botulism take to kill you?

Respiratory failure generally causes death in untreated individuals. Symptoms generally begin 12 to 36 hours after consuming the toxin in food but in rare cases symptoms can occur as early as 6 hours or as late as 2 weeks after exposure. Most people recover from botulism but the recovery period can take months.

Can you smell botulism?

You cannot see, smell, or taste botulinum toxin – but taking even a small taste of food containing this toxin can be deadly.
