Kept in the fridge, cake with buttercream or ganache topping will last for 3-4 days. If your cake has cream cheese frosting, we don’t recommend this is kept at room temperature, refrigerate for 1-2 days at most and then allow to come up to room temperature before serving.
Is it better to put a cake in the fridge or leave it out?
Most cakes, frosted and unfrosted, cut and uncut, are perfectly fine at room temperature for several days. If you do refrigerate, wrap unfrosted cakes in plastic to protect them from absorbing any weird fridge smells and to protect them from drying out, and then unwrap it to warm up on the counter before serving.
How far in advance can I make a cake with buttercream icing?
Most fillings and buttercream frostings can be made up to three days in advance and stored in an airtight container in the fridge. Press a piece of plastic wrap against the surface of the filling or buttercream before placing the lid on the container to prevent it from picking up fridge odors.
Is it OK to make buttercream the night before?
If you wish to make buttercream frosting in advance it can be made a day or two earlier (at most) and kept covered in the fridge. Allow the frosting to reach room temperature for about an hour or two before use and quickly plump it up with your mixer for a few seconds.

What is the best movement to use with the spatula when frosting cake?
Smooth the sides by holding the spatula against the side of the cake, with a slight angle pointing away from the cake. As you spread your icing, the angle will give the excess buttercream space to accumulate, making it easier to remove.

If you’re short on time though, it’s perfectly fine to refrigerate a crumb coated cake overnight. Even though the crumb coat layer of buttercream is thin, it helps preserve the cake layers beneath and keep everything moist and fresh.

Once you have done a crumb coating of the cake you will find that refrigerating the cake overnight, or for at least 2-3 hours will help the icing to firm up. Once the cake has had time to firm up in the fridge, the dams that you put in place and the crumb coat will stop the cake from bulging.
