What fats are best for cooking?
The chemical structure of saturated fat has each carbon molecule linked or ‘saturated’ with hydrogen, so when this fat is heated the molecules remain stable. This means they won’t become oxidised or rancid with heat. So saturated fats are the best for cooking at temperatures over 180℃.
Why is a cow fat?
Cows are fat because they eat grass and hay. As you’re probably aware, plants’ structures are made up primarily of cellulose. Cellulose is very difficult to digest. In fact, cows (and other animals) need help from bacteria to get the job done.
